The meat comes from the reserves in the Tuscan mountains and along the coasts where the animals are regularly culled to prevent over-population. The sauces are very concentrated and do not contain tomato, glutamate, flavourings, preservatives or colorants. The animals arrive whole at the plants where they are cleaned and cooked, all this is done by hand following traditional Tuscan recipes. After the first salmi type cooking with vegetables, the large pieces of meat are filleted by hand, the meat thus minced then continues to cook very slowly. The long cooking time (about 7 hours) and the presence in some sauces of a very small amount of tomato paste guarantee a decisive flavour and a real home-made taste like long ago

Suggestion
These sauces are very concentrated so that in many restaurants they are mixed with Ragu sauce made from beef so as to have a number of sauces available without having to prepare them all. We recommend heating in a frying pan with a little oil and two spoons of water then tossing egg noodles into the sauce
