"Lucrezia" Chianti 2001

Organic 
90%Sangiovese 10%Canaiolo
The grapes are carefully selected in the vineyards, and harvested in 8 kilo crates. They are destemmed, they are not crushed, then they are conveyed into temperature controlled stainless steel vats, where  alcoholic fermentation and maceration take place. Macerations last about 14 days . At the end of the élevage, the best lots are selected through extensive tasting, and they are assembled to create the final blend. After bottling, the wine rests for at least three months before release 
The wine is released around 18 months after harvest. Depending on the vintage, it may reach its maturity between 1 and 2  years after harvest. The plateau lasts at least 4 years after harvest.

"Don Garzia" Sangiovese Toscana IGT 00

Organic 100%Sangiovese
The grapes are carefully selected in the vineyards,
 and harvested in 8 kilo crates. Macerations last about 16 days. After completing a full malolactic fermentation, the wine is transferred into barriques. The oak is 100% French, and comes from Allier, Nevers, and Tronçais. It is 30% new and 70% one year old or two year old.The wine is regularly racked and  tasted during the whole barrel maturation, which may last up to 10 months. 
At the end of the élevage, the best lots are selected through extensive tasting, and they are assembled to create the final blend. Depending on the vintage, it may reach its maturity between 2 and 3 years after harvest. The  plateau lasts at least 8 years after harvest. Obtained only from flower must of Sangiovese  fermented in steel  and then refined in  bottle for 12 months. With an enveloping bouquet, and a note of red fruit and leather. A circular, persistent taste with graphite and wood tones. Very elegant and never covering, definitely a super-variety

"Giovanni dalle Bande Nere" Toscana IGT 00

Organic Supertuscan
50% Sangiovese 50% Cabernet
The grapes are carefully selected in the vineyards,
 and harvested in 8 kilo crates. They are destemmed, they are not crushed, and then they are conveyed into temperature controlled stainless steel vats or just for the very best parcels, small temperature controlled concrete vats. Here, alcoholic fermentation, maceration and malolactic fermentation take place. Macerations last about 12 days for the Sangiovese,and up to 20 days for theCabernet Suvignon. Afterwards
  , the wine is transferred to barriques. The different cépages undergo separate élevage for 14 months. At this stage, the best lots, selected through extensive tasting, are assembled into the final blend, and they undergo another year of élevage. The oak is 100% French, and comes from Allier, Nevers, and Tronçais. It is 70% new and 30% one year old. The wine is regularly racked and tasted during the whole barrel maturation. After bottling the wine rests for about six months before release. Depending on the vintage, it reaches maturity between 2 and 4 years after harvest. The plateau lasts until at least 15 years after harvest.
