Delicious
purées and sweet smelling roast chestnuts. The purées are
made from a very special variety of chestnut called Marrone
di Caprese Michelangelo, native to the great artist’s
town. The cooked and shelled chestnuts are reduced to a purée
which the various other ingredients are added to. The roast
chestnuts are cooked according to tradition on a chestnut
fire, once shelled they are put into jars and immersed in
liquid

The purées are an
excellent accompaniment for cheeses but are also delicious
spread on bread or used for making cakes and tarts. The roast
chestnuts are an excellent dessert on their own but are also
suitable for using as a decoration on ice-cream desserts and
custards, the liquid they’re preserved in can also be poured
over cakes
