Our
Private Selection Oil comes from the hills of Chianti in the
borough of San Casciano, a land of great wines and superb
oils. Without any false modesty we can define our oil as a
great oil, a real, rich product with such a strong perfume
and taste that we don’t recommend it for cooking fish
unless you like very strong flavours. The olive species used
are those typical of Chianti, but with a prevalence of the
highly esteemed Frantoio olives, coupled with the Moraiolo
and Leccino varieties. The oil is cold-pressed
so as to respect the intrinsic characteristics
of the olive, the
absence of filtration moreover,
ensures a unique and unmistakable
taste

It should be remembered
that this oil has a very strong taste with aromas of green
almonds, asparagus and artichoke. It’s perfect for cooking
but even better
for seasoning vegetables,
grilled meats, pasta, soups, beefsteaks
and boiled pulses |
