Marmalades and Jams
Our jams come from freshly picked fruit. For the novice seems to be obvious but it is not, in fact it is common practice to work frozen fruit, or semi for greater production flexibility, reduced time and cost as these products often come from abroad, especially China, Consider also that to give the best technical features is often used to add particles or more to give greater consistency and crispness to the product. We don't do anything of this, we take the fresh fruit from the tree, peel the fruit, cook it for a short time in order to preserve the true original flavor of the fruit and to preserve the vitamins adding a little sugar and put in the case of citrus honey to give more roundness and lower acidity to the product. The recipe we follow is from a tuscan old family grandmother wich guarantee a unique flavor.
Our jars
Worthy of note is the fragrant wild strawberries jam but also that of bergamot, a citrus fruit used primarily in perfumery.
